There are a couple of things to consider if you are planning a sunset or early evening wedding, trying to capture the serene beauty of sunset.
First thing is first - a stop to

Time and Date to get the low down on what time sunset will be on your wedding day and plan your day accordingly. Consider that your ceremony could take anywhere from 15 - 45 minutes depending on what kind of service you have planned with your celebrant. As such, you should move your ceremony to be 30 minutes or so
before sunset is due to occur.
Have a standby light source. You can't control the weather and if it's a rainy or cloudy day things are going to get darker quicker. Candles make a soft, romantic impression although it can be a disaster if you are outdoors and it's windy. Try battery powered options or even kerosene lanterns as an alternative.
Dress warm. No one wants your shivering in a strapless dress if the evening turns cold. Shawls and scarves can make beautiful wedding accessories and also serve their purpose it keeping you a little snug.
Get your photos done earlier in the day. We all know the tradition is for the bride and groom not to see each other dressed before the wedding but photographers love natural light. That's the dilemma. If you want photos outdoors then you are limited by the light available or by the equipment the photographer has. Discuss your options for photos before the day with your photographer. They will give you the best advice.
Rest up. If your wedding is later in the evening then there is no need to be up at 5am getting hair and makeup done. Make sure when you are planning your routine for the day including appointments and meal times you allow for a later start. You will need a lot of energy to make it through an evening wedding and the reception that will follow
